•        What is a “gluten allergy”?
There are different kinds of gluten-intolerance such as celiac disease, wheat allergy,
gluten neuropathy, or gluten sensitivity. When people who are gluten-intolerant go to
restaurants, it is easier to just say to the wait staff “I’m allergic to gluten”, because
people are more likely to understand the term “allergy” better than they understand
terms like “celiac disease” and “gluten sensitivity”. But in reality, many people who are
gluten-free are not actually “allergic” to gluten. Chelsea Clinton has not announced what
the nature of her gluten intolerance is, but it doesn’t matter--it all amounts to the same
thing—no gluten ever.

What is “vegan”?
People on a vegan diet avoid eating animal products. These people are vegetarians
(who do not eat “flesh foods”) but they also go one step beyond—they avoid dairy and
eggs.

 Are people who are gluten-free also vegan?
No, not necessarily. But often, people who are gluten-free are also “free” of other
ingredients. For example, many people who are gluten-free are also dairy-free because
the body can react in a similarly negative way to both types of food ingredients. Some
people are gluten-free and corn free, or soy-free. The combinations are endless but not
essential.

What are common flours used in a gluten-free cake?
Gluten-free cakes are made with a blend of flours that serve as an alternative to wheat
flour.
Some such flours are white rice, brown rice, tapioca, cornstarch, potato starch, gram or
besan, millet, sorghum, and buckwheat. Included in any gluten-free flour blend is usually
xantham gum.

gluten-free New Yorkers is that Chelsea ordered a gluten-free,
vegan wedding cake! The cake is rumored to have cost $11,000
